Shrimp and Green Bean Saute

Utensils:

2 qt, Large Skillet, Large Mixing Bowl
 

 
 
 
 
 
 
 
 

Ingredients:

  • 12 oz Fresh Green Beans
  • 1 lb Medium Shrimp, deveined and peeled
  • 1, 16 oz Can Butter Beans or Cannellini Beans
  • 1/2 Cup Cashews, halved
  • 1 TBSP peeled, minced Ginger Root
  • 1 tsp Sesame Oil (optional, for flavor only)
  • 2 TBSP Lemon Zest
  • 2 TBSP Lemon Juice
  • 1 Red Chilli Pepper, seeded and minced
  • 2 TBSP Cilantro, minced
  • 2 Garlic Cloves, minced
  • 1 tsp Smoked Paprika
  • Freshly ground sea salt and pepper to taste
  • 1 Cup Brown Rice
  • 2 Cups Chicken Stock

 

Directions:

Add the rice and chicken stock to the 2 qt saucepan. Cover, whistle open and cook on medium heat. When the whistle sounds, close the valve to “V” for vent and reduce the temperature to low.The rice will need to cook for about 20-25 minutes.
 
Meanwhile, toss the green beans, shrimp, cannellini beans, and all other ingredients to coat evenly. Add to the large skillet; cover, whistle open, and cook on medium heat. When the whistle sounds, uncover and reduce the temperature to medium low. Continue to saute the mixture until the rice is done. Season the shrimp mixture with freshly ground salt and black pepper to taste and divide into four portions. Serve each portion with a 1/2 cup serving of brown rice.
