Southwest Chicken Pinto Bean Stew

Utensils:

2-Quart Saucepan with Cover; 3qt Saucepan with Cover
 

 
 
 
 
Ingredients:

  • 4 C Broth
  • 2/3 C pico de Gallo or salsa
  • 1 small can green chiles
  • 1/2 t. cumin
  • 1/2 t. salt
  • 1/4 t. black pepper
  • 2 C shredded, cooked chicken
  • 1 can pinto beans, rinsed and drained
  • 1 C frozen organic corn
  • 2 cloves garlic, minced

 
Directions:
 

  1. Pour broth into soup pot. Stir in the salsa, chiles, garlic, cumin, salt, pepper, chicken, beans and corn.
  2. Bring to boil and simmer 10 minutes.
